got a line with 1/2-14 female npt on it now, and i need to step down to 3/8-18 male npt. is this the straight adapter for that?

For that kind of step down, it matches a 1/2-14 female NPTF on one end and a 3/8-18 male NPTF on the other, in a straight pipe to pipe brass adapter.

brass or not, will this adapter hold up in a hydraulic system runnin grease lines without leaking all over the place?

Brass construction on this fitting handles grease system applications without issue. The threads are NPT on both ends, which taper to form a mechanical seal when properly installed. No thread sealant comes pre-applied, so you'll want to use an appropriate sealant or tape on the threads before running it in a pressurized grease line. That absence of factory sealant is actually a plus for sensitive systems where contamination matters.
