Will this tee fitting hold up okay in a hydraulic system that sees a lot of vibration?

Brass is generally durable and corrosion-resistant, so it should be suitable for systems with vibration. Just be sure to check the connections regularly.

does this tee have female threads on all three ends, or is one of them male?

All three ports are female NPT, each cut to 3/8-18 thread spec. So if you're branching a line and need female connections across the board, this one fits that bill without any adapting on the ports themselves.
