fitting says it works with plastic tubing -- does that mean any plastic or does it have to be a certain kind that can hold up to the pressure rating?

Plastic tubing compatibility comes with a condition worth knowing. The 2000 psi pressure rating applies when used with metal tubing. For plastic, the tubing itself has to meet the working pressure and temperature requirements of your specific application. So the answer depends on what your plastic tubing is rated for, not on the fitting alone.
