fitting says it works with plastic, copper, and aluminum tubing, does that include soft copper like the kind used in refrigeration or instrument lines, or just rigid tubing?

Soft copper tubing falls within what this fitting is built to handle. The compression design works by mechanically compressing around the tube OD, so it grips soft copper just as well as rigid. You're looking at a 0.63 inch outer diameter requirement, so as long as your tubing matches that size, you're in good shape for instrumentation or similar lines running up to 2000 psi with metal tubing.
