got 3/8 inch tubing and need to turn into a port, is this the right elbow for 1/8 npt?

For a 3/8 inch tube outside diameter, this fitting matches 0.375 inch tube OD on the compression side and has a 1/8-27 male NPT on the threaded side, in a 90 degree elbow.

Will this fitting hold up okay if I'm running some hydraulics in my shop? Just wondering if it's tough enough.

This brass compression fitting is rated for working pressures up to 2000 psi, with a 4:1 safety factor, depending on the tube size. It's suitable for hydraulic systems when used within those pressure limits.

does this elbow work with plastic tubing, or is it just for metal lines?

Plastic tubing is supported, but there's one thing to keep in mind. Most plastic tubing requires the 2030 insert to get a proper seal. The one exception is Eaton PT230, which does not need the insert. For copper and aluminum, no insert is needed. No flaring required on any of them, which makes the whole job a lot cleaner.
