got a shop line that runs up around 180 psi, will this regulator handle that on the inlet side?

On the inlet side, it is rated for a maximum of 250 psi, so 180 psi supply pressure is within its limit. The adjustable regulated range on the outlet is 0 to 140 psi.

What size gauge does this thing use?

The 1000 through 3000 series, which this regulator is part of, uses a 1/8 NPT gauge port.
