got a 2 inch hose, will this male camlock end slip on and clamp down like normal or is it some oddball size

For a standard hookup, it follows the A-A-59326 cam and groove interchange standard, so the male adapter side is meant to mate with couplers built to that same standard (also noted as DIN 2828). The hose end is a 2 inch hose shank, so it is intended to be inserted into a 2 inch hose and secured with the appropriate attachment method for the hose.

does this adapter work with standard cam and groove couplers from other brands, or is it gonna be a fit problem?

For sizes 1/2 inch through 8 inch, it interchanges with anything built to standard A-A-59326 or DIN 2828, so mixing with other brands on those sizes is generally not an issue. Worth knowing though, the 1/2 inch and 8 inch sizes fall outside the official standard, meaning those two can be hit or miss with other manufacturers depending on who made the coupler you're mating it to.
