Will this plug fit any standard cam and groove fitting of the same size?

Interchangeability is a key feature. It will fit any cam and groove fitting made to A-A-59326 or DIN 2828 standards. Just so you know, there isn't a standard for the 1/2" and 8" sizes.

what's the pressure limit on the 2-1/2 inch size, and is it safe to run compressed air through it?

Rated at 150 PSI for liquid service, which covers the 2-1/2 inch size. That said, cam and groove couplings in this product line are not to be used with compressed air under any circumstances. Same goes for steam. Stick to liquid applications and you're well within what this fitting is built for.

got a 2-1/2 camlock setup, does this dust plug match the A-A-59326 stuff or is it one of those oddball sizes

For 2-1/2 inch size, it is built to interchange with cam and groove products made to A-A-59326 (also referenced as DIN 2828). The “no standard exists” note only calls out 1/2 inch and 8 inch sizes as the ones that generally do not interchange with other manufacturers.
