got a 3/4" female NPT port on my line. is this the right camlock piece to screw in and still have the male cam side?

For a 3/4 inch female NPT connection, this is the adapter style that threads in with a 3/4 inch female NPT end and gives you the male cam and groove half on the other side.

these cam lock fittings safe to run on an air compressor setup? got a few lines I'm trying to tie together and wondering if this'd work

Compressed air is actually one of the specific uses these fittings are not rated for. Same goes for steam. They're built for liquid service only, so running them on an air line would be outside what they're designed to handle. For liquid transfer though, they work well up to 150 PSI on the 1/2 inch through 4 inch sizes.
