what exactly does this dust cap do, is it just for keeping dirt out when the fitting ain't connected?

Pretty much, yeah. When an AG-series coupling isn't hooked up to anything, the dust cap snaps over the end to keep contamination out of the fitting. Dirt, debris, and moisture can cause real problems inside hydraulic connections over time, so keeping a cap on it between uses is just good practice. This one is made from elastomer, which gives it a bit of flexibility and helps it seat well on the fitting.
