trying to hook a 3/8 jic hose up to a metric din tube port, is this the right adapter?

For a 3/8 inch male JIC end with 9/16-18 UNF on one side and a male DIN 2353S tube end with M16 x 1.5 on the other, that is exactly what this adapter is built for. It is a straight steel fitting with a sealed DIN 2353S style connection.

Got a metric DIN tube fitting on one side of my line and a JIC 37-degree flare on the other, does this adapter actually bridge those two without needing extra pieces in between?

Yeah, that's exactly what this one's built for. One end is a 9/16-18 UNF male JIC connection, which is your 37-degree flare side, and the other end is M16 x 1.5 male DIN tube.
