trying to mate up a 3/4 JIC male fitting to a metric DIN tube connection on some hydraulic equipment we got in, would this adapter do the trick?

That's exactly what this fitting is built for. Side 1 is a 1-1/16-12 UN male JIC, which covers your 3/4" JIC connection, and Side 2 is an M30 x 2.0 male DIN tube fitting sized at L22. So yeah, it bridges that metric-to-37-degree flare gap cleanly. Steel construction, straight configuration, no adjustable ends to fuss with.
