does this bonded seal work for both hydraulic and pneumatic setups, or just one or the other?

Both, actually. The 9500-16MM is rated for use in hydraulic and pneumatic systems, so you're not limited to one application. As long as you're working with BSPP threads at the M16 x 1.5 size, it should fit right into either setup without issue.

So this is just a seal, right? Not like, a whole fitting or anything? Just want to make sure before I order a bunch.

That's correct; this Adaptall part is just the bonded seal itself, designed for use with BSPP thread applications using the M16 x 1.5 measurement. It's meant to create a reliable seal between your existing components.
