adapter's got a 1-1/2 JIC male on one end and some kind of metric female on the other -- what exactly is the metric side connecting to?

The metric end on this adapter is an M52 X 2.0 female DIN tube connection, sized at L42. That's a standard metric soft seal fitting used in European-style hydraulic systems, so if you've got a DIN tube line running L42 tubing, this is what bridges it over to a 1-7/8-12 UN male JIC side. Pretty common setup when you're mixing domestic JIC hydraulic connections with imported equipment that uses metric DIN fittings.
