what exactly is this seal supposed to keep out, and how's it different from a regular o-ring or gasket?

Exclusion seals are built to block contaminants from getting into the rotating or moving parts of a hydraulic motor, which is a different job than what a standard o-ring does. An o-ring handles pressure containment and fluid sealing between static or dynamic surfaces. The exclusion seal sits at the exterior interface and stops dirt, debris, and moisture from working their way inward before they ever reach the internal seals. On Char-Lynn hydraulic motors, keeping that contamination out is what protects the internal components from premature wear.
