All three ports on this thing are 1 inch BSPP, but which ones are male and which one's the female? Trying to figure out how it'll connect into my existing line before I order.

Two of the ports are male BSPP connections and the third is female, all at 1 inch with a G 1-11 thread callout. So if you've got a female fitting waiting on the line, it'll mate to one of the male ends, and the female port gives you a spot to thread in a male fitting or adapter on the branch side. Steel construction throughout, tee-shaped body, so the layout is straightforward once you've got it in hand.

trying to tie into a 1 inch BSPP run with a branch off it. are all three ports 1" BSPP on this tee?

All three ports are G 1 - 11 BSPP and they are all 1 inch size. Two sides are male and the remaining side is female.

What's the deal with the different widths listed? Ch1 and Ch2, are those for wrench sizes?

Those are the Adaptall Ch1 and Ch2 widths, which refer to the wrench flats on the fitting. Ch1 is 37mm wide, while Ch2 measures 41mm.
