got a hose end that’s 5/8 JIC male, will this adapter mate up with that and go into an M20 x 1.5 port?

On the JIC side, it has a 5/8 inch male with 7/8-14 UNF threads. The other end is a 20 mm metric male with M20 x 1.5 threads and it includes a seal on that metric side, so it’s meant to thread into an M20 x 1.5 female connection.
