what's the threading on both ends of this adapter, and are they both the same size?

Both sides are 3 inches. The first end is G 3 - 11 BSPP, which is a Female British Standard Pipe Parallel thread, and the second end is 3 - 8 NPTF, which is a Female National Pipe Thread. So you're getting a full 3-inch connection on each side, just in two different thread standards.
