got a 3/8 JIC line on one end and a 1/4 JIC on the other -- will this union connect the two without needing extra fittings in between?

That's exactly what it's built for. One end threads onto a 9/16-18 UNF port for the 3/8 JIC side, and the other end handles a 7/16-20 UNF port for the 1/4 JIC side. Both ends swivel, so you've got some wiggle room during installation if the lines aren't perfectly aligned. One union, two different JIC sizes, straight through.
