got a hose end with 7/16-20 JIC male on it, will this swivel right onto that?

On the JIC side, it matches a 7/16-20 UNF male JIC in 1/4 inch size, so the female JIC swivel end is set up to thread onto that.

got a line running metric DIN tube on one end and JIC fittings on the other, does this adapter cross those two over or am I looking at the wrong part?

That's what this one does. One side is a male JIC with a 7/16-20 UNF thread, which is your standard 1/4 inch JIC connection. The other side is a female metric swivel with an M14 x 1.5 thread in the L08 DIN tube size. So if you've got a JIC line meeting a metric DIN tube end, this fitting bridges that gap straight through with no angle to it.
