Will this fitting work to connect a 1" BSPP pump to a 1/2" NPT gauge?

Yes, this straight nipple fitting is designed to adapt between those sizes. One side is a 1" male BSPP, and the other is a 1/2" male NPT.

Got a metric BSPP port on a piece of equipment running a 1 inch line, what size NPT does this fitting step down to on the other end?

The NPT side comes out at 1/2 inch, so you're going from a full 1 inch BSPP male connection down to a 1/2-14 NPTF male thread on the other end. Worth knowing before you grab it that both sides are male, so you'll need female ports or female couplings on both ends of the install.

trying to hook a BSPP port up to an NPT line, is this the straight adapter for that?

For adapting between those two thread types, it’s a straight steel nipple with a 1 inch male BSPP (G 1-11) on one end and a 1/2 inch male NPTF (1/2-14) on the other.
