Does this adapter go from JIC on one end to BSPP on the other, or am I reading that backwards?

You've got it right. The JIC side is a 5/16" male with a 1/2-20 UNF thread, and the other end is a 1/8" male BSPP with a G 1/8-28 thread. Both ends are male, so you'd be threading each side into female fittings on your existing lines or components.

trying to swap an old fitting out, are the threads on this one 1/2-20 UNF on the JIC side and G 1/8-28 on the BSPP side?

Thread-wise, it is a straight male JIC to male BSPP adapter with a 1/2 - 20 UNF thread on the 5/16 inch JIC male side, and a G 1/8 - 28 thread on the 1/8 inch BSPP male side.
