Will this here fitting work with both a M30 and M27 thread?

It will. This adapter is designed with a M30 x 2.0 metric thread on one side and a M27 x 2.0 metric thread on the other, allowing connection between the two.

trying to swap an adapter on a hydraulic line. is this the one that goes DIN tube on one end and male metric on the other?

On the connection side, it is a straight male to male adapter with a DIN tube end on Side 1 and a male metric thread on Side 2. Side 1 is M30 x 2.0 (DIN tube, size S20) and Side 2 is M27 x 2.0 (27 mm metric).
