flow rate on this unit -- is 80 liters per minute the max it'll handle, or is that more of a continuous rating?

Eighty liters per minute is the rated flow for this valve. Running it right at that ceiling on a continuous basis puts more wear on the internals than staying a bit below it, so most folks size their system with a little headroom to spare. If your application runs close to that number regularly, just make sure your circuit is matched accordingly.
