flow rate on this valve, is 80 liters per minute the max it'll handle or is that more of a rated working figure?

Eighty liters per minute is the rated flow for this valve. Running it right at that number continuously isn't always the best practice, but that's the figure the DG4V-3 carries for this configuration. If your system demand stays at or below that, you're in the right range.
