flow rate on this valve -- is 80 liters per minute the max it'll handle, or is that just a rated operating point?

Eighty liters per minute is the rated flow capacity for this valve. Running right at the ceiling of a rated spec for extended periods tends to put more wear on the internals than operating at a comfortable margin below it, so if your system is regularly pushing close to that number, sizing up is worth thinking through before you commit.
