flow rate on this unit -- is 255 liters per minute the max it'll handle, or is that more of a continuous rating?

255 liters per minute is the rated flow for this cartridge. That figure represents what the valve is built to handle under normal operating conditions. Running it hard at or near that number on a regular basis is generally what the rating accounts for, so you're not looking at a soft ceiling you have to stay well under in everyday use.
