trying to swap out a fitting, is this one a 90 degree elbow with a 45 flare female swivel end?

It’s a 90 degree tube elbow fitting assembly with an SAE 45 flare female swivel on one end, part of the Weatherhead 757 E Series crimp hose fittings.

Dura-Kote plating gives this fitting enhanced corrosion resistance, which should help extend its service life.

What kind of corrosion protection does this fitting have? Running equipment outdoors and need something that'll hold up to weather and moisture without rusting out on me real quick.

Carbon steel with Dura-Kote plating is what you're getting here. That coating is specifically built to fight corrosion better than standard zinc plating, so outdoor exposure and wet conditions are well within what it's engineered to handle. It should give you considerably longer service life compared to uncoated fittings in the same environment.
