Reckon this valve plate fits both Danfoss and Eaton pumps, or do I need to get a different one for each?

This valve plate is designed to work with both Danfoss and Eaton piston pump assemblies, so you shouldn't have to worry about getting separate ones. Just double-check your pump model to make sure it's compatible.
