Got some stainless tubing I can't flare on account of the wall thickness being too heavy. This nut gonna work for that?

Heavy wall tubing that can't be flared is exactly what the 7000 Series Ermeto fittings were built around. The nut works with aluminum, hard or half copper, steel, stainless steel, and extra heavy wall tubing. No flaring needed, which is the whole point of the flareless design.
