does this fitting work with stainless steel tubing or just regular steel

Stainless steel tubing is on the compatibility list for this fitting, along with aluminum, hard or half-hard copper, and standard steel. The one requirement across all of them is that the tubing needs to be extra heavy wall, since this fitting is built for flareless use rather than flared connections.
