This Eaton Aeroquip fitting uses AISI/SAE 12L14 carbon steel with Weathercote finish, which provides good resistance against nonflammable hydraulic fluids.

fitting says it works with stainless steel tubing, does that include heavier wall stuff or just standard?

Extra heavy wall tubing is actually one of the key use cases for this fitting. The flareless design exists specifically because heavy wall tubing can't always be flared reliably. Aluminum, hard or half copper, steel, stainless steel, and extra heavy wall tubing are all listed as compatible, so you've got solid options across the board.
