What pressure can this valve handle for regular water use?

This valve is rated for 600 PSI when handling water and other non-shock liquids at cold temperatures.

rated for steam service or just water and oil?

Saturated steam is covered up to 150 psig, and cold non-shock water/oil/gas service goes up to 600 psig. Worth knowing that the pressure rating does drop at elevated temperatures, so if you're running it hot, account for that in your application.
