does this fitting come with any kind of corrosion protection on it, or is that something I'd have to add myself?

Dura-Kote plating is already applied to the fitting right from the factory. That coating is there specifically to hold up against corrosion over time, so there's nothing extra you need to do on that front before putting it into service.
