Dura-Kote plating gives this fitting really good corrosion resistance, which should extend the life of your hose assembly, even in tough conditions.

Does this fitting hold up decent in wet or outdoor conditions, or is it gonna rust out on me pretty quick?

Carbon steel fittings can be a real concern in damp environments, but Eaton Aeroquip put Dura-Kote plating on this one specifically to fight corrosion. That coating gives the assembly a meaningful edge over bare steel fittings and helps extend the overall service life of the hose assembly in conditions where moisture is a regular factor.
