does this fitting work with 6-wire spiral hose, or is it made for something different?

Six-wire spiral hose is exactly what this fitting is built around. The 6S series designation refers to that hose construction type, and the -16 dash size tells you the hose bore it's matched to. The flanged end handles the connection on the equipment side, while the line end mates to the hose during crimping.
