what's this fitting made out of, and will it hold up running hydraulic fluid through it regular?

Brass is the material on this one. For standard hydraulic and instrumentation applications, brass handles the job well, and the Dura-Kote plating adds a layer of corrosion resistance on top of that. It's rated for operating pressures above SAE standards, so it's not a lightweight fitting by any stretch.
