what's the seal material on this fitting, and is it gonna hold up around hydraulic oil?

NBR is what Brennan used for the O-ring on this one, which is a solid choice for hydraulic oil exposure. That material handles petroleum-based oils and a good range of industrial chemicals without breaking down, so for a typical hydraulic system it should give you a reliable seal over time.

got a hose end that’s 1/2-14 female NPSM swivel. will this 90 elbow thread into it on the other side?

Fit comes down to the thread types on each end. This elbow has a male SAE adjustable O-ring boss on the B1 side (9/16-18, SAE J514) and a female NPSM swivel on the B2 side (1/2-14, SAE J476). So it does not have a male 1/2-14 NPSM end to screw into a female 1/2-14 NPSM hose end. The 1/2-14 NPSM on this part is the female swivel side.
