thread on the swivel end, is that NPSM or straight pipe? trying to figure out if it'll mate up with what we already got on the line.

The swivel end runs a 1-11/2 Female NPSM thread, spec'd to SAE J476. NPSM is a straight mechanical thread, not tapered like NPT, so it won't seal on the threads themselves. It relies on a mating face or fitting geometry to make the seal. If your existing hardware is NPSM on that end, you're good to go.

trying to swap out an old A2066-16-16S, is this 6900-16-16-O the same deal?

It matches the same alternate part number A2066-16-16S and the supplier part number is 6900-16-16-O. It is a straight steel adapter with an NBR O-ring, with a #16 SAE J514 male O-ring boss end (1-5/16-12) and a #16 SAE J476 female NPSM swivel end (1-11-1/2).
