what's the material on this connector, and is it gonna hold up in a system that sees some moisture exposure?

Brass construction with Dura-Kote plating gives this fitting solid corrosion resistance, so moderate moisture exposure in an instrumentation or hydraulic line setup is well within its wheelhouse. The plating is specifically there to push corrosion resistance above what you'd get from bare brass fittings.
