what's this connector made out of, and will it hold up in a system that sees a good bit of pressure?

Brass is the material here, and Eaton Aeroquip built this one to handle operating pressures above SAE standards, so it's not a lightweight fitting. The Dura-Kote plating adds a layer of corrosion resistance on top of that, which helps when the environment isn't exactly clean or dry.
