Is that overall length measurement the total length including the threads?

That 2.500 mm overall length does indeed account for the full length, end to end.

got a hose end that’s 1-5/16-12 JIC male, will this adapter mate up to it without any goofy extra pieces?

With a male JIC SAE 37 degree flare on one side and a female JIC swivel 37 degree flare on the other, both in 1-5/16-12 threads, it is meant to connect those two JIC 37 flare styles directly under SAE J514.

thread size on both ends is 1-5/16-12, that right? just want to confirm before I order a handful of these

Both ends are 1-5/16-12, yes. One end is a Male JIC SAE 37 Degree Flare and the other is a Female JIC Swivel 37 Degree Flare, both at that same thread size. The swivel end gives you a little rotational flexibility during assembly, which helps a lot when you're working in tighter spots and can't spin the whole line.
