trying to swap an elbow on a JIC line, what thread sizes are on each end of this 90 degree fitting?

On the male side it is a #8 JIC 37 degree flare with 3/4-16 threads, and the other end is a #6 female JIC swivel 37 degree flare with 9/16-18 threads. Both ends follow SAE J514.

Will this fitting work okay with standard JIC flares?

It's made to the SAE J514 spec for JIC 37-degree flares, so yeah, it should work just fine.

i’ve got a hose end that’s 3/4-16 JIC male, will this elbow screw right onto it and still give me a #6 female swivel on the other side?

The ends are 3/4-16 male JIC SAE 37 degree flare on one side and 9/16-18 female JIC swivel 37 degree flare on the other, both to SAE J514. That matches a #8 male JIC connection on the male end and provides a #6 female JIC swivel on the opposite end.
