Thread B1 is a 1-5/8-12 male JIC and thread B2 is 1-7/8-12 male ORB, are both of those conforming to SAE J514?

Both threads on this adapter are built to SAE J514 spec. The B1 side is a Male JIC SAE 37 Degree Flare at 1-5/8-12, and the B2 side is a Male SAE O-Ring Boss at 1-7/8-12. So yes, you're covered on both ends under the same standard.

Reckon this would hold up okay in a hydraulic system runnin' around 2500 psi?

This adapter is rated for a maximum dynamic pressure of 3,000 psi, so it should be suitable for your 2,500 psi hydraulic system.
