pressure rating on this fitting, is 5,000 psi enough for most hydraulic lines or do I need something heavier?

For the majority of medium-duty hydraulic systems, 5,000 psi dynamic pressure is solid. Most standard industrial and mobile hydraulic circuits run well under that ceiling, so unless you're dealing with high-pressure intensifier circuits or specialty equipment pushing beyond that range, this fitting should handle the load without issue.

got a hose end with a male JIC 37 flare, will this screw right into it and still give me an ORB on the other side?

Hookup-wise, it is a straight steel adapter with a male JIC SAE 37 degree flare on one end and a male SAE O-ring boss on the other. The JIC side uses 1-1/16-12 threads, and the ORB side is 7/8-14 with an NBR O-ring seal.

This fitting is rated to handle dynamic pressures up to 5,000 psi.
