What's the highest pressure this fitting can handle without blowing apart?

It's rated for a maximum dynamic pressure of 5,000 psi, so you should be good up to that level.

got a hose end that’s 7/8-14 JIC, and the port is 9/16-18 ORB. is this the straight adapter for that?

For connecting a male JIC SAE 37 degree flare to a male SAE O-ring boss, this fitting matches those thread sizes: B1 is 7/8-14 JIC 37 degree flare and B2 is 9/16-18 ORB. It is a straight steel adapter and it uses an NBR O-ring/seal on the ORB side.
