Got a hydraulic line running 5,500 psi steady and I need a JIC to O-ring boss adapter in stainless. this one gonna hold up at that pressure?

At 5,500 psi continuous, you're well within what this fitting is rated for. The max dynamic pressure is 6,000 psi, so you've got a reasonable buffer above your operating load. The stainless steel construction holds up well where corrosion or fluid compatibility would be a concern with carbon steel, and the NBR o-ring takes care of the seal at the ORB end.

got a hose end with a 7/16-20 JIC male on it, will this fitting match up on that side?

On the JIC side, it uses a male JIC SAE 37 degree flare with 7/16-20 threads per SAE J514, so it matches the common 7/16-20 JIC flare connection.
