got a press application running on a 120 lpm system, this the right valve to be lookin at for directional control?

For press applications at that flow rate, this fits well. The DG4V-5 2B MU EK6 20 is rated to 120 litres per minute and is explicitly listed for press use, so the capacity lines up with what you're running. It handles three- or four-way directional control depending on configuration, which covers most press circuit layouts. The Buna-N seals are standard for hydraulic oil service, so no compatibility concerns there under normal press operating conditions.

Will this valve work alright in a machine shop setting, where it might get splashed with coolant from time to time?

These Vickers directional control valves can certainly handle the typical fluids you'd find in a machine shop, especially if you're using common coolants. The Buna-N seals offer good resistance to petroleum-based oils and water.
