got a hose end that’s 5/8 ORFS male, will this elbow screw right onto it or am i mixing up thread types

Fit comes down to the thread callouts on each side. Side 1 on this elbow is a 5/8 inch male ORFS with 1-14 UNS threads, so it matches up with a 5/8 ORFS female port or swivel that uses 1-14 UNS.

What's the deal with the "adjustable" part of the name? Does that mean I can tighten it to different angles or something?

The "adjustable" in the name refers to the fitting having both ORFS and BSPP ends, which are different standards. This allows you to adapt between the two in your hydraulic system.
