For hydraulic systems, this Eaton Weatherhead adapter is designed to handle higher operating pressures than standard SAE fittings, so it should do the trick.

what all can this brass elbow be used for, like is it just hydraulics or does it work on other lines too?

Quite a few systems actually. This fitting covers hydraulic and pneumatic lines, power steering, refrigeration, instrumentation, and LP and natural gas applications. So if you've got more than one type of line to deal with, there's a good chance this one adapter handles more than one of them.

got a 3/4" SAE flare line and need to kick it 90 degrees, is this the right kind of fitting?

For a 90 degree turn with matching ends, it’s a brass SAE male to SAE male 90° elbow adapter with 0.75 (3/4) on both End Size 1 and End Size 2, and both ends are SAE.
